Initially dubbed a meat-centric eatery (the Freep has clarified that notion), the menu features several meaty offerings, including Bavatte steaks, General Tso's chicken sausage, steak tartare, as well as a veggie-friendly section, with items like a sweet corn mulligatawny.
The duo had relocated to the Motor City in September to get to work on the new restaurant, but according to the Freep, had been cultivating the concept long before jumping ship from the Windy City.
Giacomino had been executive chef at A10, a French-Italian inspired eatery and was named to Zagat Chicago's 30 Under 30 culinary class. Vermiglio, a metro Detroit native, worked as culinary director of Chef Matthias Merges' restaurant group that includes A10, Billy Sunday, and Yusho.
The name Grey Ghost is an homage to the legend of a rum-running pirate on the Detroit River. Brought on board to head the beverage program is Selden Standard and Standby bartender Will Lee.
The 80-plus seat restaurant sits in a 2,500-square-foot space formerly occupied by Ye Olde Butcher Shoppe. Adjacent to Grey Ghost on the ground level of the Crystal Loft Building, New Order Coffee Roasters is also set to open this winter. Grey Ghost is at 47 E. Watson.
On the other side of Midtown, the Pie-Sci pizzeria intends to open Thursday or Friday next door to Woodbridge Pub, the Freep reports.
Proprietors Jeremy Damaske and AJ Manoulian had previously offered their pizzas during Sunday-only pop-ups inside the pub.
Last summer, the two dove in to transform an adjoining property into a full-time brick and mortar space for their inventive pies (with names like ICP - Insane Cauliflower Pizza - and the Lil- Kimchi - Thai peanut, chicken, green onion, kimchi).
