Robert Mondavi is a well-respected yet affordable brand, a combination of characteristics that have led the name to be popular among wine lovers. Their California wines are in high demand, especially considering the care winemakers put into each and every bottle.
Robert Mondavi's Napa Valley Cabernet Sauvignon is a classic. This particular vintage was harvested in 2012, made with fruit from the valley's best sub-appellations. Grapes were reaped from the To Kalon and the Wappo Hill vineyards and the varying soils mix to produce a beautifully concentrated, expressive, and classic Napa Valley Cabernet Sauvignon.
Because 2010 and 2011 were cold, wet growing seasons, the 2012 vintage excels compared to its two older siblings. That year a rainy early spring followed a dry winter, which soaked the soil, filling the reservoirs. Thanks to warm days and cool nights the grapes were able to hang from their vines for the optimal time, giving them tons of flavor and perfect sugar-to-acid balance.
Once the grapes were harvested in early November, they were separated into small bins, carefully soaked, and gently de-stemmed into oak tanks for a cold bath. The fruit then fermented for 26 days of wine-to-skin contact. The process maximizes extraction of varietal character and complexity, but still keeps the tannins fleshy and supple. The wine was then drained and gently pressed into 15 percent French oak barrels, making sure the fruit and oak fully integrated. The wine was finally bottle in June of 2014.
At 14.5 percent ABV, this cabernet has a nose of blackberries and dried herbs and floral that follows straight through to the palate. The flavor is a rich, concentrated wave. The mouthfeel is textual with the sensation of dark chocolate and the finish is long, delicious, and lingering.
